4 thick slices of wholemeal bread, toasted250g mature Cheddar cheese, grated100ml good cider1/2 tbsp coarse- grain mustard15g butterA few shakes of Worcestershire sauce2 tomatoes, slicedScroll down for more

METHOD
Preheat the grill. Arrange the toasted bread in a shallow ovenproof dish. Put the cheese, cider, mustard, butter and Worcestershire sauce into a saucepan and stir over a low heat until you have a smooth cream, which can take a little time as the ingredients take a while to blend together.Pour the 'cream' over the bread, lay the tomato slices on top, and pop the dish under the preheated grill until the toasted breads are browned and sizzling.
