METHOD Wash and trim the asparagus and toss it in a couple of tablespoons of olive oil. Preheat a griddle or grill. Put the asparagus on the griddle, or under the hot grill, and cook for 6-8 minutes, depending on how thick your asparagus spears are - the thicker ones will take slightly longer. You will need to turn them occasionally, to ensure even cooking, but you want them to be just cooked, as in still crunchy.Serve straight away, drizzled with the remaining olive oil and a little balsamic vinegar if you like.
